廚房排煙系統(tǒng)清洗要注意什么?

酒店廚房排煙系統(tǒng)是每家正規(guī)酒店必不可少的設(shè)備,主要承擔(dān)著為廚房排放和凈化油煙的作用。酒店廚房排煙系統(tǒng)主要由集煙罩、風(fēng)機(jī)、油煙凈化設(shè)備和煙管組成。廚房排風(fēng)系統(tǒng)的設(shè)備由于長(zhǎng)期使用,會(huì)積聚大量油煙,影響排煙系統(tǒng)的運(yùn)行效率和油煙凈化的效果。因此,為了保證廚房油煙排放和油煙凈化的效果,應(yīng)定期對(duì)廚房排風(fēng)系統(tǒng)進(jìn)行清洗。

一是在清洗酒店食堂廚房排煙系統(tǒng)時(shí),必須先切斷電源,清洗排煙口和排煙管。廚房油煙管道比較長(zhǎng),內(nèi)徑大于40cm的管道可以通過人工進(jìn)入管道進(jìn)行清理,而內(nèi)徑小于40cm的排煙管道由于人無法進(jìn)入管道,可以通過拆除部分排煙管道進(jìn)行清理。在清理沖洗排煙管道時(shí),可以先用專用工具鏟除油污較厚的部分,再使用溶油劑。用高壓清洗機(jī)噴灑溶油劑半小時(shí)后,用清水沖洗干凈。這樣排煙管的油污就基本清理干凈了,但需要注意煙管連接處的密封處理,避免清理后出現(xiàn)漏油現(xiàn)象。

Spray the oil dissolving agent with a high-pressure cleaner for half an hour, and then rinse it with clean water. In this way, the oil stain of the smoke exhaust pipe is basically cleaned, but attention should be paid to the sealing treatment of the joint of the smoke pipe to avoid oil leakage after cleaning.
